Dates: September 12, 19, 26 and October 3, 17.
Days: Saturdays 12pm – 3pm
Price: $55/person/Saturday or $185.00 for four Saturdays.

Forest Gourmet Club Overview:
With years of experience in the culinary industry, our certified chef, Melissa Ellingham, is interweaving her passion for health and the outdoors to create a space for youth to safely explore the joys of cooking. Forest Gourmet Club will be focusing on nutritious, family-friendly foods while incorporating as many seasonal and local ingredients as possible. Each week we will focus on new skills and different cuisine. All cookware and ingredients will be provided.
Understanding wellness; how nutrition, movement, rest, and emotional health create a healthy body.
Cooking safely, consistently, and efficiently
Knife safety, etiquette, and chopping techniques (julienne, dice, mince, etc)
Minimizing food waste; how to use every part of the ingredient
Organization and cleanliness; basic FoodSafe lessons and time management.
Cooking methods (stewing, roasting, poaching, frying, etc) and how they structurally affect the ingredient.
Cultural awareness; using food as a tool to explore the world while we are stuck inside.

2. Day Program Guidelines:
We will be following the “COVID-19 PRINCIPLES AND EMERGING PRACTICES FOR BRITISH COLUMBIA SCHOOL AGE LED OUTDOOR ACTIVITIES” guidelines established by the Outdoor Council of Canada. To read these guidelines, please click here.
